Super Simple Greens and Beans soup

I've been making this soup every week for more than two months now and I can't get bored of it. It's extremely simple to make and so comforting and delicious.

Ingredients

  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 3-4 cloves garlic
  • 1 can chopped tomatoes (400 g)
  • 2 cans beans (black or kidney or cannellini or mixed)
  • 1 liter vegetable stock or water
  • 1 head small cabbage or 3 bok choy (Chinese cabbage, kale, broccoli rabe, etc.)
  • 2 tsp Italian seasoning (oregano, basil)
  • 1 tsp onion powder
  • 1/4 tsp chili flakes
  • salt
  • 1 tbsp lemon juice

Instructions

  • Saute the chopped onion and garlic in coconut oil until translucent. 
    Add the remaining ingredients except for the lemon juice. 
    Simmer for about 30 minutes. 
    When everything is cooked add the lemon juice and stir it. 
    Season with salt and pepper if needed.
