I've been making this soup every week for more than two months now and I can't get bored of it. It's extremely simple to make and so comforting and delicious.

Ingredients
1tbspcoconut oil
1onion, chopped
3-4clovesgarlic
1 canchopped tomatoes (400 g)
2cansbeans (black or kidney or cannellini or mixed)
1 litervegetable stock or water
1headsmall cabbage or 3 bok choy(Chinese cabbage, kale, broccoli rabe, etc.)
2tspItalian seasoning(oregano, basil)
1tsponion powder
1/4 tsp chili flakes
salt
1tbsplemon juice
Instructions
Saute the chopped onion and garlic in coconut oil until translucent. Add the remaining ingredients except for the lemon juice. Simmer for about 30 minutes. When everything is cooked add the lemon juice and stir it. Season with salt and pepper if needed.Enjoy!
