Valentine’s Day is around the corner. How do you feel about it? Love it, hate it or just ignore it?

If you are in a relationship, do you celebrate it?

If you are not in a relationship, do you just try to ignore it or do you have fun and celebrate it with your friends? After all, it is the celebration of love and we love our family, friends, and children too. That love deserves to be celebrated too.

We usually have a low key little celebration at home with my partner. We might have a nice dinner and later a box of chocolate and champagne together (not healthy I know but we don’t do this every evening). The nice dinner this year is probably not going to happen, as Valentine’s day is on a weekday, and I need to take the kids to after-school classes all afternoon till 7 in the evening. But we’ll see. We can certainly make up for it at the weekend.

A special breakfast might be a good option too.

I’ll show you a few high protein vegan breakfast ideas for Valentine’s Day that can be eaten even in bed if you don’t mind the crumbs. They are all very tasty.

Extremely simple vegan protein pancakes

Let me introduce you to these extremely simple vegan protein rich mini pancakes. They are my favorite Sunday breakfast when I want to eat something other than fruit, smoothie or oatmeal. These protein pancakes can easily keep me satiated till lunchtime. The fun part is pouring all kinds of yummy things on top of them. My two favorites are peanut butter plus berry sauce (frozen berries warmed up a bit) or plant based yogurt plus fruit. Mango or strawberries are sooo good. I’m sure you have your favorite combos too.

I increased the protein content by adding vegan protein powder and flaxseeds to the batter. Flaxseeds are very healthy, we should eat 1 tablespoon every day, according to Dr. Michael Greger, famous American physician. He introduced the so called “daily dozen” foods, from which we should eat every day, if we want to be healthy. I will write about the daily dozen in a future post, so stay tuned 🙂

So why are these small seeds so healthy? They are one of the best sources of essential omega 3 fatty acids, they contain cancer preventing lignans, control the cholesterol, triglyceride and blood sugar level, anti-inflammatory and prevent constipation too.

The recipe for the pancakes is extremely simple: just blend the ingredients with a blender or hand held mixer and cook about one tablespoon amounts in a little coconut oil. Now comes the fun part, decorating them 🙂

We all know that antioxidants keep us healthy and we should aim to eat as much of them as possible. You know that, right? Here I show you a mega-yummy breakfast bowl containing the superfood acai berry, which has record amount of antioxidants (twice as much as blueberries) in it. To make this acai smoothie bowl even healthier, I added other ingredients that are rich in vitamins, minerals and healthy fats too. It is a really energizing breakfast that will make you glow 😉

So what is this acai berry? It comes from Brasil, it contains a good amount of vitamin A and C, a lot of fiber, calcium, iron, potassium, zink, magnesium and omega 6 – 9 fatty acids. It is, as most of the berries, a very low calorie fruit. You can sometimes find it frozen in health food shops but much easier to get hold of it in juice or powder form. In this recipe I used a powder. Most of the powders are produced by lyophilization (freeze drying), this way the useful ingredients are preserved.

It is well known that banana makes our smoothies nice and creamy. It is also rich in fiber (no more problem in the loo) and contains tryptophan, which turns into serotonin, our happy hormone, in the body! Do we need more? Ok, maybe some healthy fats would be nice too. That we get from the walnuts and flaxseed. As a bonus, they also make the smoothie creamy and they contain protein as well.

As we know from the equation of healthy eating, leave greens are the healthiest foods in the world. In the form of spinach we have some of them in this smoothies as well. You will not taste it, I promise!

The base of this lemon chia pudding are chia seeds that soak up liquids and create a pudding like yummyness.  This lemon chia pudding is a lovely, refreshing and satiating breakfast. I used sweet gooey dates to sweeten the pudding instead of sugar. The recipe is incredibly easy. You just mix everything together and wait until the mixture reaches the desired pudding like thickness.

Chia seeds are incredibly healthy, they contain plant protein, fibre, omega 3 fatty acids, calcium, magnesium and iron. The lemon alkalizes our body and provides vitamin C, while the iron rich, sweet, almost caramel tasting dates balance the tartness of the lemon.

I had a Matcha tea with my pudding. Matcha tee is a Japanese green tea which is a great option instead of coffee. I don’t drink coffee since years. During my pregnancies I developed and aversion to the smell and taste of coffee and I still don’t feel like starting to drink it again, therefore I wake myself up with various teas in the morning. They keep me alert for longer and I also don’t have the bad aftertaste and smell in my mouth that I had after drinking coffee.
