Refreshing, omega 3 fatty acid and vitamin C rich, quick breakfast
The base of this lemon chia pudding are chia seeds that soak up liquids and create a pudding like yummyness. This lemon chia pudding is a lovely, refreshing and satiating breakfast. I used sweet gooey dates to sweeten the pudding instead of sugar. The recipe is incredibly easy. You just mix everything together and wait until the mixture reaches the desired pudding like thickness.

During my pregnancies I developed and aversion to the smell and taste of coffee and I still don't feel like starting to drink it again, therefore I wake myself up with various teas in the morning. They keep me alert for longer and I also don't have the bad aftertaste and smell in my mouth that I had after drinking coffee.
