Valentine’s Day is around the corner. How do you feel about it? Love it, hate it or just ignore it?
If you are in a relationship, do you celebrate it?
If you are not in a relationship, do you just try to ignore it or do you have fun and celebrate it with your friends? After all, it is the celebration of love and we love our family, friends, and children too. That love deserves to be celebrated too.
We usually have a low key little celebration at home with my partner. We might have a nice dinner and later a box of chocolate and champagne together (not healthy I know but we don’t do this every evening). The nice dinner this year is probably not going to happen, as Valentine’s day is on a weekday, and I need to take the kids to after-school classes all afternoon till 7 in the evening. But we’ll see. We can certainly make up for it at the weekend.
A special breakfast might be a good option too.
I’ll show you a few high protein vegan breakfast ideas for Valentine’s Day that can be eaten even in bed if you don’t mind the crumbs. They are all very tasty.
I don’t have a waffle maker so I used a sandwich toaster for this recipe and it worked perfectly.
Switch on the waffle maker. Spray with a little bit of coconut oil if it’s necessary.
Put the oats, protein powder, flax seed, baking powder, and baking soda into a food processor and pulse it a few times.
Add the water or milk and mix it until smooth.
Cook the waffles in the waffle maker, about 8-10 minutes per waffles.
You can serve them with berries (frozen is fine too), peanut butter, maple syrup or chocolate sauce. For the chocolate sauce mix cacao powder, maple syrup/stevia and water/coconut oil.

You don’t need to use eggs to make a nice french toast. In this recipe, I substituted it with silken tofu and used good quality seeded wholemeal bread. You can also use Ezekiel bread or protein bread.
This sweet, dairy and free French toast served with berries and maple syrup can be a perfect breakfast on Valentine’s day.
Blend the milk and tofu and soak the bread slices in this mixture.
Cook them in the coconut oil for about 5-8 minutes at low temperature.
Sere it with the raspberries and maple syrup.

These little pink hearts are not really a stand-alone breakfast, rather a decoration on a simple breakfast. You can decorate any breakfast you usually eat (e.g. porridge, oatmeal, whatever) with these little hearts to make them special for Valentine’s Day. You make them ahead of time and then you can just take them out of the freezer and pop them on top of (or next to) your everyday breakfast. Tada! Valentine’s Day breakfast is ready 🙂
Squash the berries with a fork and push them through a sieve to remove the seeds.
Mix thoroughly the berries’ juice, the hemp seeds, coconut flour and nut butter in a small bowl.
If you can’t form small balls from them add some water.
Form little balls and push them into a heart shaped silicon mold.
Keep them in the freezer until you need them.
When you want to decorate your Valentine’s day breakfast, simply pop them out of the silicon mold and use them.

If you live somewhere where it’s hot during Valentine’s Day you can simply cut out heart shapes form a watermelon and you have the simplest and most refreshing breakfast ever. I can’t show you an image of heart-shaped watermelon pieces as it’s freezing cold here and don’t have watermelon, but I’m sure you can imagine 😉
