Let me introduce you to these extremely simple vegan protein rich mini pancakes. They are my favorite Sunday breakfast when I want to eat something other than fruit, smoothie or oatmeal. These protein pancakes can easily keep me satiated till lunchtime. The fun part is pouring all kinds of yummy things on top of them. My two favorites are peanut butter plus berry sauce (frozen berries warmed up a bit) or plant based yogurt plus fruit. Mango or strawberries are sooo good. I’m sure you have your favorite combos too.

I increased the protein content by adding vegan protein powder and flaxseeds to the batter. Flaxseeds are very healthy, we should eat 1 tablespoon every day, according to Dr. Michael Greger, famous American physician. He introduced the so called “daily dozen” foods, from which we should eat every day, if we want to be healthy. I will write about the daily dozen in a future post, so stay tuned 🙂
So why are these small seeds so healthy? They are one of the best sources of essential omega 3 fatty acids, they contain cancer preventing lignans, control the cholesterol, triglyceride and blood sugar level, anti-inflammatory and prevent constipation too.
The recipe for the pancakes is extremely simple: just blend the ingredients with a blender or hand held mixer and cook about one tablespoon amounts in a little coconut oil. Now comes the fun part, decorating them 🙂

Extremely simple vegan protein pancakes
Very simple to make, yummy, protein pancakes. They keep you satiated due to the high plant protein content coming from vegan protein powder, linseeds and peanut butter.
- 1/2 cup oat flour ( or your preferred flour )
- 2 tsp backing powder
- 1 tsp cinnamon (optional)
- 1 tsp vanilla essence
- 1 tbsp ground linseed
- 1 pinch salt
- 1/2 cup almond milk
- 2 tbsp protein powder
- 3-4 tbsp water (depending on protein powder)
- 2 tbsp peanut butter or PB2 (according to taste)
- 1 tbsp maple syrup or stevia
- 1/2 cup berries (fresh or frozen)
- 1 tbsp cornstarch (optional)

Blend the first nine ingredients with a lender or a hand held mixer and leave it to rest for a few minutes. If it’s too dry add a little bit more water or almond milk. Some protein powders soak up more water.
Instead of blending you can also mix first the dry ingredients and then add the wet ingredients and mix until it’s smooth.
Cook little pancakes (about one tablespoon amounts) in a little bit of coconut oil. When small bubbles appear on the top, turn them over and cook about 30 seconds more.
Serve them with peanut butter (I added a little bit of water so it’s easier to pour, or make your peanut butter from PB2 powder for a lower fat option) and fresh berries. When fresh berries are not available heat frozen berries up a bit and you can also add some cornstarch and stevia (and cinnamon) to make a nice berry sauce.
