Super quick, simple, nutritious lunch or dinner.
1/2 block tofu
1 tsp coconut oil
2 cups frozen peas
1 red pepper
1/2 – 1 cup cooked quinoa
1 tbsp soy sauce
1 tbsp coconut milk powder or a splash of coconut milk
Cube the tofu and fry in a little bit of coconut oil until nicely browned. Cut the pepper into small cubes and cook them together with the peas in a little bit of water. In the meantime cook the quinoa according to package instructions, or use leftover cooked quinoa.
When the peas and peppers are soft add the soy sauce, coconut milk powder, and the cooked quinoa. Serve it with fresh coriander/cilantro.
